Roasted sweet potatoes, tart apples, peppery arugula, & creamy garlic mayo on cranberry walnut bread makes this sandwich the ultimate vegan comfort food sandwich! Inspired by The Food Company (Nashville, TN) Elsa sandwich.

Serves: 1 sandwich
Ingredients
  • 4-5 slices peeled sweet potato (~1/4 inch thick)
  • 2 slices cranberry walnut bread
  • 1-2 T. vegan garlic mayo (I used Just Mayo brand)
  • 1 handful arugula
  • 3-4 green apple slices (~1/8 inch thick)
Instructions
  1. Preheat oven to 425 degrees F. Line a baking sheet and lightly spray with coconut oil or baking oil of your choice. Spread out potato slices on sheet, lightly spray with oil, and roast for 15 minutes, flipping after about 10 minutes.
  2. Spread mayo thinly on each slice of bread. Add arugula to one slice and apple slices to the other.
  3. When the potatoes are soft and slightly golden, carefully transfer them to the top of the arugula and press the sandwich slices together.
  4. Cut in half and serve as is, or grill in a panini press until crispy and hot.
Notes
To make future sandwiches come together faster, roast several sweet potato slices at once and reheat them before serving.
