Easy Moroccan Lentil Stew

Ingredients
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 28-oz can crushed tomatoes (no salt added)
  • 2 15-oz cans lentil soup (I used Amy's brand), preferably low sodium
  • 1 15-oz can chickpeas, drained
  • ½ cup raisins (I used golden)
  • 2 t. ground cinnamon
  • 1½ t. ground cumin
  • ¼ t. red pepper flakes
  • 1-2 T. mango chutney (optional, but recommended)
  • Dairy-free yogurt or coconut milk, for garnish
  • Fresh cilantro, for garnish
Instructions
  1. Heat a splash of water in a large soup pot over medium heat. Add the onion and sauté 3-4 mins until translucent. Add the garlic and cook one minute, stirring constantly.
  2. Stir in tomatoes, lentil soup, chickpeas, raisins, cinnamon, cumin, red pepper flakes, and mango chutney. Bring stew to a simmer over medium-low heat, stirring occasionally.
  3. Simmer, uncovered, 10-20 mins, or until stew is reduced and thickened.
  4. Serve with a Tablespoon of yogurt or coconut milk and a sprinkle of fresh cilantro, if desired.
