As often as I recommend doubling a recipe and putting one half in the freezer for later, I must admit that I have yet to actually follow my own advice. The freezer space in our kitchen fridge is extremely limited, so over the weekend we bought an extra freezer to keep in the garage. Now I have no excuse!
I decided to create a list of good meals to keep in the freezer for those nights I’m too busy or don’t feel like cooking. With just a small amount of extra work, Future Me will be so grateful for easy dinner options!
10 Nutritious Meals to Keep in Your Freezer:
[Click the photos for links to the recipes!]
1. Lentil Shepherds Pie with Gnocchi Crust
2. Mushrooms Fra Diavolo
3. Chickpea Sloppy Joes
4. Squash & Chickpea Pancakes (GF)
5. Veggie Pot Pie (GF)
6. Potato & Spinach Lasagna (GF)
7. Butternut Squash & Kale Gnocchi (GF)
8. Spaghetti Squash Pie (GF)
9. Avocado Enchiladas
10. Mac & Trees (Vegan)
All you have to do is thaw and reheat, and dinner is ready!
Freezing nutritious meals is a great idea if you’re trying to lose weight. Having home-cooked meals on hand reduces the chance that you’ll dine out or pick up carry-out for dinner, which would undoubtedly be higher-calorie, higher in sodium, and lower in essential nutrients than the recipes above. The more home-cooked meals you eat, the healthier you’ll be!
So choose your favorite recipes from the list above, and get cooking!
I’ll do the same 🙂
