That's awesome!!! I need to try cucumber soaked in lemon for Abby. She likes cucumbers, but only if they have flavor. And I'm super impressed by the spinach salad lover! Abby will eat some kale salad if it has a sweet dressing, but she generally spits out raw greens. She might like spinach salad though! Thanks for the comment!

It's interesting, one of my kids' favorite salad is a spinach and strawberry salad with walnuts and homemade raspberry vinaigrette. If put it on the table before the meal while he's sitting down, by the time I bring the main course it's gone! Another one of my children loves cucumbers soaked lemon, they dissappear before the rest of us sit down, when done he asks "what else are we eating for dinner?". People are always amazed at how young children can like healthy foods and in my opinion is a matter of exposure and consistency. Put it on their plate, even if they won't finish it, eventually they will!
