Sometimes all you need to make a salad exciting is a creamy, flavorful dressing, such as this Herby Green Goddess Dressing. With four different herbs, avocado, lemon, tahini, and nondairy yogurt, you may just want to eat it with a spoon!
The combination of the fresh herbs and lemon with the hearty creaminess of this green goddess dressing makes it a great option towards the end of winter when a vinaigrette feels too light, but you’re ready for a taste of spring.
If you’re not a fan of super thick dressings, you can always add more lemon juice or water to thin it out. Another option is to leave it thick and use is as a dip for fresh veggies!
- ½ cup unsweetened plain nondairy yogurt (I like Forager brand)
- ⅓ cup smooth tahini
- 2-3 Tbs. fresh lemon juice
- 1 tsp. coconut aminos or low sodium tamari (or soy sauce if not GF)
- 1 garlic clove
- ½ tsp. salt
- ½ medium avocado
- ½ medium jalapeño, seeds removed (optional)
- ½ cup fresh parsley
- ¼ cup fresh dill
- ¼ cup fresh cilantro
- ¼ cup fresh basil
- Black pepper to taste
- Add all ingredients to a blender and blend until smooth.
- Taste and add salt or lemon juice if needed. Thin with water or more lemon juice to reach desired thickness.
- Keep in a jar up to 4 days, adding more lemon juice and shaking before serving (the citrus flavor weakens over time). The dressing may thicken in the fridge, so add more water or juice and shake jar before serving.
The recipe for this green goddess dressing makes enough for 6-8 salads, depending on how much you thin it. It’s loaded with nutrients from the herbs, avocado, and tahini, plus it’s free of added oils. I recommend tossing it into a salad of hearty greens, such as green cabbage or romaine, then adding any veggies you like. If you’re feeling really crazy, top your salad with a few crushed salt & vinegar kettle chips!
