Hello, friends! It’s been way too long since I’ve posted a new recipe, but this Mexican Cauliflower Rice makes the wait worth it. It’s flavorful, full of nutritious veggies, and is super easy to throw together for a fun dinner! And I know it’s good, because my picky husband even likes it!…
Turmeric Vegetable Stew
If you cook for yourself often, you’ve probably discovered that the soups that you throw together using whatever is in your fridge or pantry can turn out to be the best soups. And that’s exactly how I came up with this Turmeric Vegetable Stew — my new favorite soup! …
Ethiopian Sweet Potato Stew
This easy Ethiopian Sweet Potato Stew came from my desire to have dinner cooking in my crock pot while I worked on other things around the house, kept my 3-year-old alive and entertained, and tested other recipes for the blog. The result was too good not to share! Even Picky Husband gave it two thumbs up! 🙂 …
Roasted Vegetable Alfredo Bake
I gotta say, I’m SO glad it’s fall! I enjoy the summer, but it’s hard to beat those crisp fall days, the colorful leaves, the return of the Dixie Classic Fair, and the fall comfort food recipes. I’m also turning 29 tomorrow (for the third year in a row)! To celebrate, why don’t you make this comforting, nutritious, creamy Roasted Vegetable Alfredo Bake? It’s so good and filling, you’ll swear it contains dairy. But actually, I used my kitchen wizardry to make sure this one-dish wonder is vegan, gluten-free, and oil free! …
Lazy Vegan Lasagna
As much as my husband and I love lasagna, I’ve found that most of the vegan lasagna recipes out there just aren’t worth the effort. Many of them use tofu with several ingredients added to make it taste like cheese, but it never quite gets there. However, a couple of weeks ago I decided to come up with a vegan lasagna recipe that’s simple and delicious. I had an idea to try combining soaked cashews with a can of hearts of palm to make the ricotta, and the result was better than I’d imagined! …
Thai Spaghetti Squash Stir-“fry”
It seems like once a week I realize I don’t know what to cook for dinner and I don’t feel like going to the grocery store. For this reason, I always try to keep a spaghetti squash on hand. I cook mine in the microwave, so it’s super easy to prepare, my whole family likes it, and it’s light and nutritious. When my fridge is really bare, I serve it like spaghetti — with marinara and some type of protein. But to make things more interesting, I prefer to use up as many veggies in the fridge as I can. The solution? This Thai Spaghetti Squash Stir-“fry!” …
Roasted Spring Vegetable Salad with Magical Green Dressing
Now that it’s May, I hope you’re taking advantage of the fresh, local spring vegetables — asparagus, radishes, and peas. I love to use produce that’s in season, so I came up with this roasted spring vegetable salad that’s simple, bursting with flavor, and of course, incredibly nutritious!…
Creamy White Bean Chili
It’s Friday, the Super Bowl is in two days, and all I want to do is eat this creamy white bean chili for every meal until I run out. Then I will make more. It’s that good….
Cornbread Taco Casserole
I’ll admit, this is the most excited I’ve been about a recipe in a while. I haven’t had much time to spend experimenting in the kitchen lately, thanks to the craziness of the holidays, but now I’m back on the health train (and thus, back in the kitchen!). Last night I threw this cornbread taco casserole together after seeing a not-even-close-to-vegan version on Facebook, and my family loved it! I’m thinking this recipe will be added to our dinner rotation!…
Lemony Lentil Stew
It’s January, it’s cold, and I’m trying to be extra healthy in the wake of my holiday diet indiscretions, so all I really want to eat is nutritious soups. And since I was stuck in the house most of last weekend due to a snow storm, I had ample time to create this simple and satisfying Lemony Lentil Stew!…
Zucchini Pasta with Basil Avocado Pesto
If you’ve never used a spiralizer to make zucchini pasta, you are truly missing out! I finally caved and bought a legitimate one that has a crank, and I love it! I’m growing zucchini and cucumbers in my garden, so I figured I should start spiralizing! …
Zucchini & Tomato Lasagna
I hope everyone had a happy 4th of July!
Our family celebrated with a delicious meal of carrot dogs and oven fries, which you must try if you haven’t already.
Anyway, last week I taught a cooking class at Southern Home & Kitchen here in Winston, and it was a great success! The theme was raw vegan, so “cooking” class is actually a misnomer. The menu included three flavors of cashew cheese, a pear and arugula salad with Meyer lemon dressing, raw zucchini and tomato lasagna, and fresh mint ice cream with chocolate date sauce. I also brought samples of my mini cinnamon rolls for everyone to try. The menu was a hit!…
