Fudgesicles w/ Protein (+ A Product Review!)

June 1, 2015 by maryrossfowler 1 Comment

Fudgesicles w/ Protein

You know you’ve made it as a food blogger when you’re mailed a product and asked to do a review on your blog!

And I’ll admit, because I believe it’s possible to eat all of the protein you need from eating only plants, I generally don’t endorse protein powders.

BUT . . .

When I received my sample of Nature’s Food Organic Protein, I was impressed by its ingredient list and the fact that it’s 100% vegan, gluten-free, soy-free, and lactose-free. It’s also free of preservatives, cholesterol, and artificial flavors and sweeteners. The main reason I like this product, however, is the fact that it contains Bacillus coagulans, which is a beneficial probiotic (good bacteria). Probiotics help boost your immune system and aid in digestion by improving gut health, and should be part of everyone’s diet! …

Cornbread Donuts (2 Ways!)

May 27, 2015 by maryrossfowler Leave a Comment

featured

I’m getting very antsy waiting for summer vegetables to arrive. Every day I go out to my garden to check my tiny green tomatoes, hoping they will suddenly ripen and I can pick them and start using them in recipes. Unfortunately, I have to be patient and hold off on making any recipes that include produce from my garden.

One summer vegetable I’m not growing, however, is corn! And since I purchased a donut pan last week, I decided to make vegan, gluten-free cornbread donuts! …

Sparkling Strawberry Rhubarb Lemonade

I don’t know about you guys, but I can’t get enough of local strawberries right now! They’re so perfect and sweet, they make me want to eat them right when I get them.

I’ve been receiving a new carton of local strawberries each of the past two weeks in my Homegrown Grocery basket (like a CSA), and this week I decided to use half of my carton to make a sparkling strawberry rhubarb lemonade!…

Red Bean Ice Cream (Vegan)

May 20, 2015 by maryrossfowler 2 Comments

I’m continuing my Asian-inspired ice cream flavors this week with this red bean ice cream made with sweet red bean paste! Last week I posted a black sesame ice cream, which you absolutely must try!

Red bean paste (known as anko) is a common filling to mochi, dumplings, cookies, and other Chinese and Japanese desserts. At first the idea of beans in my desserts made me cringe, but after I tasted that sweet red paste, my mind was filled with new dessert recipe ideas!

But first, ice cream . . . 🙂 …

Black Sesame Ice Cream (Vegan)

May 12, 2015 by maryrossfowler 7 Comments

Well, the time has come. I’ve finally caved to my husband’s requests and dusted off the ice cream maker, which has been stored for the winter. I generally resist making ice cream because I love it so much that if it’s in the freezer, I WILL eat it. I’m sure most of you can relate.

And after tasting this recipe, I knew I was in trouble!…

Copycat Elsa Sandwich

May 8, 2015 by maryrossfowler 4 Comments

I very rarely eat bread, but after tasting this sandwich at one of my favorite lunch spots in Nashville, I knew I had to make it myself. The roasted sweet potatoes, tart apple slices, peppery arugula, and creamy spread on cranberry walnut bread combine to make a fantastic hot sandwich that you must try!

The Food Company, a sweet little lunch and catering restaurant with a greenhouse bar, is well-loved by the Nashville locals in the Green Hills area. It is known for its fresh salads, flavorful soups, and unique sandwiches. When Abby and I were in Nashville last week visiting my family, I ate at The Food Co. three times, and could not get enough of their sweet potato sandwich! They call it The Elsa, which is why I call mine the Copycat Elsa Sandwich. …

Almond Oatmeal Breakfast Cookies with Chia Seed Jam

April 29, 2015 by maryrossfowler 1 Comment

cookies with coffee

As I’ve mentioned in previous posts, breakfast is not a meal on which I enjoy spending lots of time. I’m usually too eager to start my day and will settle for a bite of Abby’s morning banana and a cup of coffee. I’m also guilty of grabbing a leftover oatmeal cookie and calling it “oatmeal” to make myself feel better, which was really the inspiration for this recipe.

There are several other breakfast cookie recipes online, but all of them I saw contain banana as a key ingredient. Banana is fine, but not everyone likes its strong flavor (my husband, for example), so I decided to make a nutritious banana-free cookie that constitutes a balanced breakfast. The result was high in fiber, protein, omega-3’s and antioxidants, and so delicious!…

Asparagus Fries With Sweet Mustard

April 16, 2015 by maryrossfowler Leave a Comment

Asparagus Fries

I’ll admit, I like asparagus, but I don’t love it. For me, it really depends on how it’s cooked.

I had a bunch of asparagus in the fridge, so I decided to dredge each spear in my super-nutritious flax batter and bake them. What resulted was a delicious appetizer or side dish that I believe even kids would love! I call them asparagus fries, even though they’re not technically fried. I dipped them in a store-bought maple champagne mustard, but any honey mustard would do. …

Piñata Peppers With Vegan Queso

April 12, 2015 by maryrossfowler Leave a Comment

Piñata Peppers w/ Queso

If you keep up with my blog, you know that I love Mexican flavors — cilantro, cumin, lime, etc. If I had to choose one type of cuisine to eat for the rest of my life, it would be Mexican. And fortunately, it’s very easy to turn Mexican ingredients into a plant-based, super-nutritious meal!

I call this dish “Piñata Peppers” because the peppers are stuffed with all kinds of colorful ingredients — rainbow quinoa, black beans, corn, fire-roasted tomatoes, jalapeño peppers, and fresh cilantro. I top them off with my vegan queso, which adds a creamy element and makes them even more special.  …

Banana Berry Granola Bars With Toasted Coconut

April 11, 2015 by maryrossfowler Leave a Comment

Banana Berry Granola Bars

Yesterday I posted a recipe for Peanut Butter Chocolate Chip Granola Bars, and since granola bars are so customizable, I decided to make another flavor: Banana Berry with Toasted Coconut.

Dried fruit, although fairly high in sugar, is a convenient snack (especially for toddlers!). I decided to combine my two favorites — freeze-dried bananas (a.k.a. “space” bananas) and dried wild blueberries. And since I had some toasted coconut on hand, I crushed some of that and added it to the mix. All of these flavors, in addition to the almond butter and ground cinnamon, come together to form a granola bar that tastes like a blueberry muffin with a hint of banana. It’s a great bar for breakfast on the go! …

Peanut Butter and Chocolate Chip Granola Bars

April 10, 2015 by maryrossfowler 6 Comments

PB Granola Bars

A few weeks ago I posted a recipe for homemade granola, so it’s no surprise that I decided to make granola bars, right?

My husband has been leaving for work early for meetings lately, so he has been requesting a breakfast he can grab and take with him. Loose granola lacks the convenience factor you get with granola bars, so I obliged and made two different bar flavors — peanut butter chocolate chip and banana blueberry with toasted coconut. After a few tweaks, I’m now very happy with the results — perfectly chewy, crunchy, slightly sweet, and nutritious! …
