This mash is a great replacement for mashed potatoes! Eat it as a side dish, or top it with a cauliflower steak and walnut caper salsa.

Ingredients
1 head cauliflower florets, chopped
4 cups vegetable broth
1 15-oz. can white beans, drained and rinsed
2-3 cloves garlic, chopped
Salt and pepper to taste
Instructions
Heat the broth in a pot over medium heat. Add the cauliflower and boil until fork tender, 10-15 min.
Transfer cauliflower to a food processor, saving the broth. Add the remaining ingredients and pulse. Scrape down the sides of the food processor and add the hot broth, a few tablespoons at a time, until the mash reaches the consistency of of whipped potatoes.
Taste for seasoning and add more salt or pepper as needed.
Notes
This cauliflower mash reheats well in the microwave or on the stove, so feel free to make it a day or two in advance if you like.
