Easy Pumpkin Pasta Sauce

This pumpkin sauce is great on any pasta, and comes together so quickly, you'll love it on those busy weeknights in the fall!

Ingredients
  • ½ yellow onion, chopped
  • 3-4 cloves garlic, chopped
  • 1 15-oz can pumpkin purée (not pumpkin pie filling)
  • 1 13.5-oz can coconut milk
  • Salt (start with ½ tsp)
  • Black pepper
  • ½ tsp dried sage
  • ¼ tsp crushed red pepper flakes
  • 2-3 tsp sherry*
Instructions
  1. Sauté onion and garlic over medium heat in ¼ inch of water until translucent, about 5 mins.
  2. While onions and garlic are cooking, add the pumpkin purée, coconut milk, salt and pepper.
  3. When the onions and garlic have finished cooking, stir in the sage and pepper flakes for about 30 seconds, then pour contents of pot into the blender. Blend until completely smooth, then taste for seasoning.
  4. Return sauce to pot and cook over medium-low heat until hot enough to serve. Turn off the heat and stir in the sherry.
  5. Ladle pumpkin sauce over your favorite pasta, and keep leftover sauce in the fridge up to one week.
Notes
* Sherry isn't absolutely necessary, but if you have some on hand, I recommend adding it for an extra layer of flavor.
