This year I decided to make a kale salad to go with all of the other standard Thanksgiving sides. Because my parents and my husband’s parents are going to be there, I want it to be special. …
Pregnancy Nutrition: Supplements
Although nutrition is important in every stage of life, it is especially crucial right before conception and during pregnancy. Many women obsess over what they should and should not eat, while others view pregnancy as a time to eat whatever they want. What many women neglect, however, is the importance of choosing the right supplements. There are many supplements available that market to pregnant women, but the scary thing is that supplements are not regulated by the FDA. …
Lemon Dill Chickpea Salad
I’ll admit that salad recipes are not my favorite to create. Usually my salads consist of greens and whatever vegetables are in my fridge. But sometimes I want to make my salads a little more special, like when a friend comes over for lunch or my mom is in town. For such situations, this lemon dill chickpea salad is perfect! …
Thin Mints with Ganache Buttons (Vegan and GF)
Growing up, it was a Sunday tradition for my mom to make a chocolate dessert for our family. Usually it was her famous chocolate pie, but occasionally it was an attempt at healthy brownies or sugar-free fudge, most of which ended up in the trash. Despite the dessert failings, I now have a deeply rooted desire for chocolate on Sundays. As chocolatey as these cookies are, they would be the perfect Sunday dessert….
Butternut Squash and Kale Gnocchi
This is by far my favorite vegetarian comfort dish to make. It is so simple to prepare, doesn’t mess up my kitchen, and my picky husband loves it. …
Breakfast Scramble
I have a confession. For being a dietitian, I’m really bad at breakfasts. As much as I love cooking, it’s not something I want to do right after I wake up. In fact, most days all I want is a cup of coffee (do as I say, not as I do!). But on the weekends I’m more willing to dirty up the kitchen to prepare a nutritious breakfast for David and me. …
Spaghetti Squash Pie
If you have never cooked spaghetti squash before, it’s time for you to try it. It’s so much easier to cook than actual pasta, and is 10x better for you! …
Caramel Apple Cheesecake Bars (Vegan)
Avocado Enchiladas
Every time I return to Nashville to visit family and friends, I make sure to go to one of my favorite restaurants, Cantina Laredo. Although they have many tempting options on their menu, I always order the same thing: a margarita avocado enchiladas. I love this dish so much that I decided to make a copycat (but healthier) version. …
Roasted Tomatillo Salsa
Roasted tomatillo salsa, also known as salsa verde, is the perfect blend of tangy tomatillos, tart lime juice, fresh cilantro, and spicy jalapeno. It’s very easy to make, and adds a lot of flavor to any Mexican dish….
Why I Don’t Feed My Baby Rice Cereal
If you have ever had a baby, you probably received a pamphlet or read books about how and when to start feeding your baby solid food. In my experience, most pediatricians and nutritionists recommend starting your baby on iron-fortified rice cereal between 4 and 6 months of age. The reason for this suggestion is that a) rice is the food that is least likely to cause an allergic reaction, b) rice is fairly easy for immature organs to digest, and c) babies only have enough iron stored up from being in utero to last them 6 months, and they do not get enough from breast milk. …
Gooey Pecan Pie Tart
I must say, I’m really proud of this recipe. Many “healthy” dessert recipes are made with date paste, and frankly, I’m tired of tasting dates in my desserts. All week I’ve been working on this recipe, and I’m proud to announce that I’ve done it! I’ve developed a pecan pie that replaces the butter, eggs, corn syrup, flour, and refined sugar with almond flour, flax, maple syrup, and caramelized coconut milk. This is definitely a recipe to use during the holidays!
