Do you ever make a meal that checks all of the boxes — it’s nutritionally complete, your family loves it, and it comes together quickly and easily? When I find a dish like that, I get very excited and add it to my regular dinner rotation. If you’re like me, you’re constantly trying to feed your family new foods with the hope that they’ll love them and you can add them to your meal rotation. Most of my attempts result in an “eh, it’s good but not great” response from my semi-picky family. But this time I hit a home run with my Pink Primavera Sauce! …

Ethiopian Sweet Potato Stew

October 17, 2017 by maryrossfowler Leave a Comment

Ethiopian Stew

This easy Ethiopian Sweet Potato Stew came from my desire to have dinner cooking in my crock pot while I worked on other things around the house, kept my 3-year-old alive and entertained, and tested other recipes for the blog. The result was too good not to share! Even Picky Husband gave it two thumbs up! 🙂 …

Roasted Vegetable Alfredo Bake

September 28, 2017 by maryrossfowler Leave a Comment

roasted vegetable alfredo

I gotta say, I’m SO glad it’s fall! I enjoy the summer, but it’s hard to beat those crisp fall days, the colorful leaves, the return of the Dixie Classic Fair, and the fall comfort food recipes. I’m also turning 29 tomorrow (for the third year in a row)! To celebrate, why don’t you make this comforting, nutritious, creamy Roasted Vegetable Alfredo Bake? It’s so good and filling, you’ll swear it contains dairy. But actually, I used my kitchen wizardry to make sure this one-dish wonder is vegan, gluten-free, and oil free! …

Lazy Vegan Lasagna

July 31, 2017 by maryrossfowler Leave a Comment

lazy vegan lasagna

As much as my husband and I love lasagna, I’ve found that most of the vegan lasagna recipes out there just aren’t worth the effort. Many of them use tofu with several ingredients added to make it taste like cheese, but it never quite gets there. However, a couple of weeks ago I decided to come up with a vegan lasagna recipe that’s simple and delicious. I had an idea to try combining soaked cashews with a can of hearts of palm to make the ricotta, and the result was better than I’d imagined! …

Cornbread Taco Casserole

January 21, 2017 by maryrossfowler Leave a Comment

taco casserole

I’ll admit, this is the most excited I’ve been about a recipe in a while. I haven’t had much time to spend experimenting in the kitchen lately, thanks to the craziness of the holidays, but now I’m back on the health train (and thus, back in the kitchen!). Last night I threw this cornbread taco casserole together after seeing a not-even-close-to-vegan version on Facebook, and my family loved it! I’m thinking this recipe will be added to our dinner rotation!…

How to Build a Whole Food, Plant-based Meal

August 19, 2016 by maryrossfowler Leave a Comment

meal plate

If you’re like me, you grew up in a typical American household in which the answer to the question, “What’s for dinner?” was always some kind of meat — meatloaf, Parmesan chicken, roast beef. That’s because we are used to meals in which the meat is the star of the show and the sides are mere decoration. Just look at a restaurant menu if you don’t believe me.

But let’s say you’ve watched “Forks Over Knives” and read How Not to Die and are ready to switch to a whole foods, plant-based diet. Where do you begin? How do you feed yourself and your family without leaving everyone dissatisfied or hungry an hour later? How do you make sure everyone is getting the nutrients they need?…
