As I’ve aged, I’ve decided that I find bland food offensive. I compulsively purchase exotic spice blends and add them to everything, am unsatisfied with restaurants that lean on salt as their key seasoning, and I find myself enamored by new brands of hot sauce. As a result, the food that I cook at home contains layers of flavors and a little heat — hence my newest recipe, Lemon Harissa Cabbage Soup. …
Mexican Quinoa Bake
As a huge fan of Mexican food, I would never turn down a good taco, but there’s something so comforting and easy about a casserole that’s hard to beat. You just scoop it onto your dish and top it with whatever you like, then save the leftovers for another day. I created this Mexican Quinoa Bake to satisfy my cravings for Mexican flavors in casserole form, and this recipe is a must-share! …

Healthy Sugar Cookie Granola
Last week my son was at camp, but my daughter Abby stayed home with me. At first she was super bummed that she didn’t have camp, but I told her we could have “Mommy Camp” and do fun things together instead. As a result, we had a great week together! We spent time at a local bookstore, went for a long hike at Hanging Rock, NC, cooked a delicious dinner together, and developed a fun new recipe — Sugar Cookie Granola! …

Creamy Roasted Garlic Anti-cancer Soup
As someone who is constantly thinking about nutrition and healthy eating, I find that there are times in life when eating well is more challenging. The holiday season and during pregnancy are both times when it’s easy to slide into eating for comfort rather than health. Leading up to Thanksgiving, I decided to make a soup that’s packed with phytonutrients (which happen to fight cancer) and flavor. Just look at the ingredient list, and you’ll know this Roasted Garlic Anti-cancer Soup is going to give you a healthy dose of nutrition!…
Chewy Double Ginger Molasses Cookies
There’s something about the cooler fall weather that makes me crave ginger cookies. I suppose it’s the warmth from the spices or simply the association of gingerbread with the holidays. Either way, a couple of weeks ago I really wanted to make ginger molasses cookies. I looked online for recipes, chose one that sounded good, and adapted it to my liking. What resulted was my new favorite non-chocolate cookie! …

Creamy Hungarian Mushroom Soup
It’s been a while since I’ve posted a new soup recipe, and that’s mainly because of a lack of inspiration. I made it through the winter with my old soup recipes, like my most popular Kenyan Maharagwe, my Simple Black Bean Soup, my Mexican Tortilla Soup, and my Creamy French Lentil Soup, among others. But recently I’ve been seeing recipes for Hungarian Mushroom Soup, so I was intrigued. Hungarian because of its large amount of Hungarian paprika, this soup also typically contains dill, thyme, and three or four kinds of dairy (!). You know exactly what I did — I veganized it!…
Breakfast Cookies
Being a parent to two young kids is no joke. Mornings have become a divide-and-conquer task as we get both kids ready for school. When I have time, I prefer to make smoothies or oatmeal, but both of those must be fed to Luke (or cleaned off of the floor and walls later), which takes up my time when I need to be doing Abby’s hair or making the coffee. I needed something healthier than a handful of Cheerios that Luke could feed himself while I do other things in the kitchen. My solution was to create these delicious, nutrient-dense Breakfast cookies, and I gotta say, they’re pretty fantastic! …
