It’s the middle of July, which means it’s extremely hot outside and you’re constantly in search of cool treats. You could buy popsicles full of sugar and dyes, OR you could make these creamy, refreshing Peaches and Cream Popsicles and enjoy the delightful summery taste of fresh, ripe peaches! They contain only four ingredients, and you don’t even have to get the blender dirty. Easy AND delicious — my kind of recipe!
I’m not the biggest fan of summer, but I am HERE for fresh summer produce. Homegrown tomatoes, zucchini, watermelon — mmmmmm! But probably my favorite thing to do is bite into a perfectly ripe, juicy peach. To me, it’s better than candy. And so, when I realized I purchased more ripe peaches than I could actually eat before they go bad, I decided to slice them up and create these fun peaches and cream popsicles.
Abby was my eager taste tester, and she was in love! “Mommy, how did you come up with these?! These are SO GOOD!” I just humbly patted her on the head and reminded her that Mommy is a culinary genius.
When it comes to making my own popsicles, I’ve been pretty lazy. I had to dust off my old popsicle molds because I hadn’t used them since before we moved (which was a year and a half ago!).
The most difficult step of this recipe is slicing and peeling the peaches. My peeling method involves carefully running a paring knife under the peel of each slice. There’s probably a more efficient way to do it, but that’s what I did. After that, feel free to let the kids help. Just cram as many peach slices as you can into each mold, then pour the sweetened coconut milk up to the fill line, shove in the stick, and freeze for a few hours!
Honestly, the waiting is the worst part!
- 2-3 large peaches
- 1 can full-fat coconut milk
- 3 Tbs agave or pure maple syrup
- 1 tsp vanilla extract
- Slice peaches about ½ inch thick and carefully remove the peels. Place 4-6 slices in each popsicle mold, leaving some room for the coconut milk.
- In a large jar with a lid, add the can of coconut milk and sweetener. If coconut milk is chunky, place jar in the microwave for 30 seconds or run jar under hot water to warm. Add vanilla, then replace lid and shake until mixture is smooth.
- Pour coconut milk mixture over peach slices until you reach the fill line. Then push the popsicle stick into place and freeze until solid, at least 4 hours or so.
- To serve, run popsicle molds under warm water until the popsicles slide out easily.
- Enjoy!
These peaches and cream popsicles taste like peach ice cream, but without the dairy! The coconut milk creates the perfect creamy texture to compliment the sweet tangy flavor of the peaches.
This recipe would also be great with strawberries or blueberries!
